Christmas Baking!

Not too old this year!

Much slower than previous years maybe, but I accomplished what I set out to do … my Christmas baking. This year there isn’t the variety that I used to produce, but there just isn’t enough time or energy to do more.

It took me four days to make one batch! Day one, I got the recipe out and looked at it for a while, then I decided not to make it, and put the recipe away. The second day I got the recipe out again and made up my mind that I was going to bake for  this year’s gathering. In the morning of day three I gathered all the ingredients and measured them, all ready to go. In the afternoon I mixed them, and put the results in the fridge to set up a bit.

Fourth day – this morning I started the oven and baked my one batch of cookies. Boy, they taste so good. Maybe you would like to try my recipe. Unless you are 88 years old, you can make them in a couple of hours, or less!

Whipped Shortbread

  • 1 pound butter
  • 1 cup icing sugar
  • 1/2 cup corn starch
  • 3 cups flour
  • 1 tsp vanilla

Soften butter well. Whip all together with mixer. Drop by teaspoonful on cookie sheet. Press with fork.

Bake at 375   5 to 10 minutes.

I use margarine, and they are delicious!

  1. heheh I knew you’d bake if you wanted to. 🙂 It took me two years to build and finish a chef’s table. I think I spent 13 months looking at it, then two weeks putting it together, another ten months thinking about stains and varnishes, then another few weeks to do the actual staining. 😀

  4. Shortbreads are my favourite cookies Norma and yours look delicious! I am only 60 and even I do not liking baking like I use to even though I have more time to do it now that I am retired .But I find myself being more selfish and doing things that I want to do like photography and being on Flickr,and checking out Lonnie Grace’s blog.It is more about me!Keep shining!
